Yep, it should be a dealbreaker. You'd need to find a new place to sleep, likely for multiple reasons!

If you can't get the Italian 2K product (some of us in rural/remote areas can't), consider Waterlox. And remember that you can't use this counter as a cutting board with any of those finishes (which you probably already know...).

a couple notes:

1. specifically, I’m using Waterlox urethane

2. I’m good with no one sleeping in the bedroom for a week. bedroom has a door to the outside, so I’ll have that open with a fan running

3. planning on covering/sealing the bed with a plastic drop cloth. Plus taking all clothes out of the bedroom

i don’t really have anywhere else to do it. need a warm enough space for it to dry proper and also don’t have a garage.

If I were in your shoes, or your GF's, I'd be ok with that (including removing bedsheets, clothes, etc.). But really you should ask your GF. People have widely differing sensitivities to the smells and volatiles of wood finishes.

I did just learn about portable blowup spray sheds. They look like nondescript bouncy houses, but for woodworkers.

Also, I hear ya on using a different product with less residuals, but at this point I’ve got what I got. I won’t use it to cut on. I did so much research and separate trips to the store to settle on the finish I have now, and it seems like it will do the job, even though it’s gonna smell for a while

Remove ALL soft items (bed, bedding, drapes, clothes, shoes, rugs, stuffed animals, etc).

I suffer from migraine so I would be really upset if my bedroom turned into a VOC jungle gym.

With the precautions you're taking, it will be fine. She won't smell a thing.
