Depending on how wide the space is between the cabinets, I would most likely run it length-wise on an offset pattern. It won't be wide enough with that size tile to create a real pattern if you go side to side.

Sorry, no advice on color other than typically either a very light (blond, low grain) or a very dark (mocha type) for a modern look with smaller width planks.

This is strictly opinion and from experience with other clients. A real designer would be more in tune with the true technical answers for you.
