I’m going to share our lighting plan for our main floor as it’s not too far off of yours. In my opinion you don’t have enough light.

I don’t think I want a fixture in the dining area. In the great room, maybe a large pendant in the middle and definitely table/floor lamps.

Avoid placing recessed fixtures directly above people's heads; instead use adjustable or wall-washer fixtures to light walls where artwork or photos might be hung. In a kitchen the best location for adjustable recessed fixtures at counters is to align them with the outer edge of the counters. Put 2 fixtures over a sink to avoid the sharp shadows of LED lamps..

I like pin spots for islands but some people like pendants but they should be above eye level of a 6 ft+ tall person. Some pendants provide such low light on an island I put I" LED pin spots between them.

If you want a ceiling fan don't put a light on the bottom of it; get a "ceiling hugger" model.

Rarely a client will want a great deal of light and I have put 4" deeply recessed spots on a 4ft grid with half of them switched separately.

For reduced glare and good color use 4" COB LED's that comply with Title 24. Check out the Nora Cobalt and Cobalt Click fixtures.

I think it is totally appropriate to have pendants in a kitchen, some kind of overhead lighting in morning and dining room in addition to recessed lighting
