36” Induction range or 36” gas range

Hi everyone,
Doing a full kitchen remodel. We had planned to get a 36 gas range, but our designer said we should consider induction as well. I have no experience with them and really don’t know much about them. I have started my research and looks like lots of advantages. But I also love gas ranges.
I’d love to know what your thoughts are on induction vs gas. FYI we only have propane available to us, which is more expensive than natural gas.

    I’d go induction all the way. Visit a local appliance store and they’ll likely do a demo. I’m not talking big box stores, but local mom & pop stores. Induction is super easy to use, easy to clean, easy to control temperatures. The only thing you need to check is if your pots and pans are induction ready. Simply hold a magnet at the bottom. If the magnet attaches, you’re good to go.

    I'll second induction. I have had natural gas and propane. While I liked natural gas, I found propane lacking. I have induction now and love it. It is so easy to clean and not difficult to learn to use. I went with actual control knobs for control.

    Definitely induction, especially if you're other consideration is a propane range. You'll have all the heat control of a gas stove, but without the heat or flame (and it's easier to clean than most).

    Pu it this way, if my husband weren’t such a flame freak, I would’ve gotten a 36” induction rangetop, instead of the high end gas rangetop we got. The ease of cleanup alone, had me sold. But, since I got everything else I wanted in our renovation, I conceded on the gas.

    If I were in your shoes, I’d definitely go with induction...especially as you can’t get a natural gas hookup to your home.

    induction if you had natural gas. Propane only makes it a no brainer for induction. About the only thing that you cant do easily is use a wok - and toast marshmallows .


    there should be a sticky somewhere because this comes up often. There re some "gas only" but it more tradition then a pro/con decision. I have had both and would never go back to gas and we cook a lot at home

    Induction for me, without a doubt. Don't like gas even though it looks swanky.

    36" induction cooktop gives you the most range of quality choices. Miele and Bosch are options. They don't offer a 36" range. A plumbed Miele XXL combi steam oven can go below the cooktop or in a wall location.

    Note that 36" induction ranges start at $5K, often have few features, small ovens, and are from weird brands. Thirty-inch models are the sweet spot of the induction (and range) market, are less-expensive, have more features, have larger ovens, and are more readily available.

    If you are thinking about induction, be sure you have the electrical capacity in your breaker box, or can upgrade the wiring to handle the demands of an induction range.

    wdccruise I hadn’t thought of that. Today I saw a Verona 36 induction. Know anything about that brand? I appreciate all the comments! I’m brand new to all this.

    Do you live where there is power outages? Then gas or propane are a good choice. I always had electric in the past. Two 7 day outages convinced me. I don’t bake a lot but Iwhat I have done worked out fine find meat is more moist.

    I wouldn't say F&P, Bertazzoni, or Wolf are "weird brands"........they're well established, with good reputations. They are pricey, though.

    We will be building soon, and I was seriously considering induction. But where we live now it’s possible for power to be cut off for decent stretches of time... and I actually do a lot of high heat wok style cooking. So, we have decided to go with gas even though our only option is propane as well. (And I checked a lot of my cookware and magnets weren’t really sticking and I’m old enough that I don’t want to buy new cookware or change my cooking habits.) But it could potentially be another two years before our house is ready to move into between the Covid delays and the fact that our area had major wildfires this past summer and so many are trying to re-build. Anyways, the surveyor is supposed to come out to our land this week... we hope. I might get myself a small bit of induction... maybe... but we’ve decided to go with a BlueStar rangetop for most of our cooking after all.

    Toronto Veterinarian, do you know anything about Verona? They have a beautiful looking 36 induction range for right at $5K.

    Love my induction range. Love everything about it. I had a Viking gas cooktop in one vacation house and found clean up so much more work. To lift and clean heavy grates every time I cooked, even just to fry an egg, was no vacation. It’s so quick, I got rid of my microwave. It boils a cup of water in 33 seconds.
    I did need new pots but seeing that I was getting a whole new kitchen; in for a penny, in for a pound.... I gave away some pots and use others on my side gas burner of the barbeque.
    There is nothing I don’t like about it.

    The issue with the "weird" brands (and I don't put Wolf in that category) is service. They just don't have a significant service cover fort non-metro areas. Live in NYC or LA? Probably good. Manchester VT - could be a problem. Everything breaks and then what? The Italian and Chinese brands are most susceptible to this. They just don't have the sales volume to structure anything more than a basic parts supply with 3rd party service

    30" Bosch 800 range is a popular good quality choice. No need for a 36" range for most families other than looks. If I wanted a 36" capability I would go wall ovens and cooktop over any of the few 36" induction ranges. Those big ranges are more of a 'gas' thing, imo.

    We are doing a kitchen remodel and taking out the 36" gas range and installing a modular cooktop system that includes both gas and induction cooktops and then a wall oven.

    We have a 36" Bertazzoni induction range. It has a huge single oven. I love everything about this range. It bakes like a dream. The hob controls are dials and very easy to adjust. Cleanup is a snap. The qualtiy of the appliance is fabulous.

    MJohnson, did you decide on your induction range? We are strongly considered the Verona 36" induction and might purchase this week. I haven't been able to see their induction in person though have seen their gas ranges. Any information you've found or insight in the Verona ranges?

    We purchased the 36 inch Dacor range and love it. The boost features on the cook top work so efficiently and heat up instantly. The oven is huge . Induction is so much safer than gas and also not difficult to use as is implied by many. We are pretty great cooks in our household and could not be happier with the induction and we all have had experience cooking with gas.

    amaranthan We went with an Aga induction range and absolutely love it.

    @itsourcasa yes we did purchase the Verona Induction. We've been using it for a few months and absolutely love it. Easy to use. And it is even so much faster and powerful than our vintage gas range which was really great. We don't miss the gas "power" at all - there is plenty of power with induction. Plus the clean up is so easy. No burners to clean out the spills.

    @amaranthan that is so great to hear!! Hoping there is a black friday sale on it. Oven cooks evenly? That is my biggest problem with my current Cafe range.

    @Mjohnson Which Aga range did you get and how do you like it?

    @amaranthan Are you still happy with the Verona?

    I like the Aga and Verona, but there are so few reviews. Bosch now has a 36” induction range, which seems like a safer choice, but I don’t like the oven touch controls.

    jbm08 I got the Aga Professional 36” range. Model AMPRO36IN-SS. I love it!

    Excellent. Hope it gives you lots of years of great cooking. I would never go back to gas after using my induction cooktop for the last 4 years.
