Why not do granite, quartzite or marble?

Thanks for your question! I really like the smooth uniform aesthetic of cladding with a large slab. I learned through these forums that running a quartz backsplash behind a slide in range is both a dangerous fire hazard, and high risk of scorching warping the quartz🤔🙁. My contractor was insouciant about it; said there are no code particularities in our area of 🇨🇦 Canada( Greater Toronto Area), & he wouldn’t worry as my slide in range is electric & not high powered. The Cosentino rep also was blithe, but really her role is to sell the product. We are going to ask him about the drywall prep suggested by Houzz Pros; only communicating through his office admin as he’s at his cottage untill end of week.
The stone fabricators are not open to the public due to lockdown restrictions, so can’t even view those options, and I’m not feeling the “small tile” look, although I appreciate it as a classic & who knows might go there in the end. We are doing this project through Home Depot and also cannot enter the physical store to look @ tile styles. Cosentino is the only fabricator allowing booked viewing appointments.
Very horrible time to do a momentous renovation. My husband and I are thinking Dekton would give us the look we admire and peace of mind.

You're certainly never going to scorch Dekton, however, putting a noncombustible surface over a combustible wall does not turn the combustible wall into a noncombustible wall according to the NFPA. Check the appliance manufacturer's installation instructions please.

OK thanks. I am sure my contractor-Home Depot-will be scrupulous re: stove install. I have looked the online install instructions & didn't see clearance addressed. I will verify model & call LG myself. I couldn't rest if I were creating hazards for fire & damage.
