You have a lovely kitchen. What brand are those cabinets? Will you have a 30 inch cooking range? Your acreage above the range will be limited for anything really flashy. It can be done as you can see in that first photo below. I would prefer a more simple look since your counters have lots of movement. I like your ideas of herringbone patterned tile.

Here are some cute ideas with small cooking ranges similar in size to yours.

This is cute and they did a great job with an accent behind the range under the hood. Maybe it could work for you.
