2021 Interior Window Finishes?

Hi,
I have just started getting my windows replaced (black trim) and unsure what should do for interior finish. 1) Drywall or 2) Jamb and casing
Unsure if jamb and casing is outdated? especially since I tend to be more modern with my decor choices: gray tile in herringbone, floor to ceiling hinged closet doors and black ceiling and white walls
Please help! Thank you in advance :)
