Glass tiles so close to the burners does not meet code anyway. You will have to remove the tiles on the left. Stainless Steel sheets will work. I had the same backsplash in my house, I think it's from the 80s. You may want to replace the side and the back with steel. There are many different textures options available.

Which backsplash did you have in the 80s-- my current or the stainless?

What happens with glass tiles next to stove?

What about stove next to wall up-to-code? This is NYC, by the way.

I would just paint it with a satin or high gloss paint.

I think I had exactly the same colors you have, now that I'm looking at it closely. It has browns and greens with the light colored grout. I moved into this house in 2018. I correct myself it was built in 2006. 80s didn't have glass tiles.

I have a degree in Hotel Management and part of the course was culinary arts and housekeeping. I'm also a Kitchen and Bath Designer. Look up my business page MAV Design Concepts LLC on Houzz. So here's what we learned in school and through work:

Anything close to a fire source is a hazzard. Unless you have concrete block or poured walls it's just too much of a risk putting a range right next to a wall that has gyp board on it. Paint will peal with heat. Glass tiles can get chipped easily with a pot or a ladel. Counterspaces on either sides of a range is recommended. A glass window cannot be less than 18" from a heat source per building code.

As a rule all surfaces in the kitchen should be made of materials that can be sanitized easily, will not break, chip, warp or fray. Crevices or absorbant surfaces will harbour bacteria and mold, so surfaces that are antimicrobial and non absorbant are preferred.

From the design point of view, the burners next to the wall will not have wiggle room to swirl your frying pan or easily allow you to pick up a hot large pan with both hands with mittens on them.

I understand that in an old apartment or home in NYC may not allow you any choices. But, you're doing the right thing by putting stainless steel.

Depending on the lighting and cabinets, these mosaics can give off different colors. It worked out really well in my space and coordinates nicely with stainless steel. I might have chosen metal tile for backsplash if I had more time to research.

Any thoughts on how to affix the sheet metal? Would it be screws in four corners and/or glue?

I used this: Broan-Nutone SP3004 30 in. x 24 in. Splash Plate for Range Hood in Stainless Steel. It attaches with four screws that aren't visible (in my installation) because two are under the microwave oven and two are below the level of the cooktop.

I didn't get the plate quite flat and hoped the range would push against it to flatten it out. Alas, the wall wasn't flat so that didn't happen :-(. You might want to use adhesive if you can't get the plate flat against the wall using just screws.
