Pick after countertops are installed. Then you will see how busy or not, the countertop actually is.

For your countertop, have you seen the full slab?

I would leave final back splash decisions until you have the floors cabinets and counters installed.

Also what is the overall look you are going for in the house/ kitchen? This also has an impact on the back splash choice.

There are lots of different kinds of sbuway tiles these days; textured, matte, glossy, different sizes. The textured ones kinda sorta look handmade. Your countertops have a lot of pattern. I'd be careful with pattern on the backsplashes unless you went with the same slab on the backsplash. I like your choices to far and am sure it'll look great.
