In my opinion you should prepare lighting for all 10 people. I mean - when it comes to dinner with 10 people or more, you don't want to keep your guests in the darkness, right?
There are many different options you can do that. If you are using spotlights, you can change their lighting direction anytime you want, so you can reposition lighting from time to time.
You could also group lighting into few different groups and use only ones you need at the moment.

I have a dining table that goes from 84" to 120", I mostly keep it with 1 leaf at 102". I chose a large round chandelier that fits the room size, and the ceiling height. The light looks almost oversized (dramatic) when the table is at its smallest, otherwise it would look too tiny when it's full out to seat 12. A little drama in the dining room is good :) Measure your room.

Thank you for the responses. I am hoping to have a chandelier over the table but wasn't sure which table size to use. I'll take a look at the room measurements again and see how that works out.
