Google "wall hung sink." These don't require a pedestal, so you could mount it at any height you want.

If you look at photos of wall-mounted sinks you'll see that in nearly every case where any pipes are visible only the drain pipe is shown, no water lines. In many cases, the photo is taken from an angle such that no pipes are visible. Why? Because water pipes are ugly and and valves are often in the wrong positions for a remodel. However there are a few models that are sort of mini-pedestals that hide the pipes. Examples:

My SIL had a very narrow tall custom cabinet made for a vessel sink (adds even more height) in her powder room. Tiny powder room in a new build, but the only other bathroom on that main floor is their master so needed. Her husband and his brothers all over 6'6". I suspect most guests average height can't use it well. I can't, without water running down my arms, or somehow splashing her counter top or floor just washing my hands ;0)

Vessel sinks are poor choices for bathrooms because one can't shove the gunk that lands on the countertop into the sink.

I have vessel sinks in 3 bathrooms...never had a problem keeping the countertop clean....

How do you push toothpaste, shaving hairs, soap, dirt, and other crud that collects on the countertop into the sink?

No one has ever accused me of being a cleanliness freak, but it's just not a problem. The sinks are a decent size and almost all the detritus lands in them. Every couple of weeks I probably spend 10 seconds with a moist kleenex wiping the granite countertop.

Back to the OP’s sink issue.... look at Duravit’s US site. They do wall hung sinks you can hang at any height and then you get their wall mounted cover (similar to one sink above) that covers the pipes. It does not reach the floor.
