The height of the table has nothing to do with how much space is required. Each person at a table needs a minimum of 2' width. The bench seat needs to be 18" deep or deeper if you will have cushions on the back. Because you are building a square booth you will have 18" extra to each of the 2 corners. The back wall of the booth will measure 18 + 24 + 18 = 60" wide. Add 24" for a side booth seat plus 18" from the corner and that's 42". That's 17.5 square feet for the booth area. Below is a drawing that shows the layout. IMO, it would be better to just have 4 bar stools around a table.

I saw this:

• Table Height (30" high tables/counters): Allow a 24" wide x 18" deep knee space for each seated diner and at least 18" of clear knee space [i.e., 18" overhang]
• Counter-Height (36" high counters): Allow a 24" wide x 15" deep knee space for each seated diner and at least 15" of clear knee space. [i.e., 15" overhang]
• Bar-Height (42" high counters): Allow a 24" wide x 12" deep knee space for each seated diner and 12" of clear knee space. [i.e., 12" overhang]

the height of the table does matter in determining the depth needed.

using a bench, a built in bench, eliminates the space needed to pull out a chair or stool. Built in nooks use less depth space.

the width space is not an issue, 24”.

You did not say how much space you have: your question was how much space is required. The numbers I came up with are the minimum recommended

The knee space required assumes the person is perched on the edge of the seat with their legs extending to the floor. Bar seating has stretchers that people rest their feet on, and this raises the angle of the knees.

In the pictures below I show four 18" chairs with backs around a 30" table. I agree that there is not enough room when the chairs and table are squared to the wall. However, if the table is set diagonally to the wall, there is more room for the chairs and more room to get in and out. I'm not saying this arrangement fixes everything, but it's something more to consider.
