Way too hot to transplant now. If you can put shade cloth (or an umbrella) over, that will help, but in our climate (and you are considerably hotter than I am) transplanting woody plants is best done in late fall/winter. This is just due to the heat and long days. Shade and water may allow them to limp through, but since they are not going to regrow those burned leaves, even if they survive, you may have to wait a whle for them to look decent.

mulch around the plant will also keep the soil cooler and out of direct sun ....

I'm new at this - I know now not to plant in summer. I got the plants through our local shade tree program and they didn't say anthing about not planting at this time

Not watering enough

I've been checking soil moisture levels and it has been between 3-5. I water every other day. I'm also afraid that I might end up overwatering
