For the bed I like beige over gray.

IMO bedding drives decor in a bedroom and so start by posting the bedding . As for the color of the bed upholstery you need to decide if you are going warm or more cool colors in the bedding . I like the 1st inspo pic and you will notice the accent color behind the bed is in the bedding. So I repeat bedding first that sets the tone for the room.

Is there a preferred height the headboard should be?

Height (and shape) are just a personal preference. If you search “beige upholstered headboards” (or grey) on Pinterest, you’ll see lots of different styles. If you tag on ”in bedroom” in your search, you should get a sense of what appeals to you. Consider proportions, as the wall is not large and also nightstands have to feel balanced. If interested in adding art above, choose a lower style.

If the window is opposite the door that enters the room, placing your bed there will provide you with more secure, restful sleep. You'll also not have to angle any furniture, which is distracting and makes it look like you don't have room for what you have.
