Ikea countertops held hostage

We purchased Caesarstone counters from Ikea in May and had the template done by a local fabricator in June. We were not using an Ikea sink but had our new sink there, in the box. He took a photo of it and included the model number on the template. He asked if I wanted the hole for the under-counter soap dispenser on the left or right. I told him right and he wrote that down and wrote to put it 10" to the right of the faucet for that sink. When they arrived for installation, they found that the hole was incorrect, and should've been 8" for that sink. They took that piece and most of the pieces away without installing saying they would come back with the new piece. Now the fabricators and Ikea are holding the rest of our countertops hostage until we pay them $900 more to remake the piece that they cut wrong! They are telling me I requested it be cut to the incorrect size and I signed off on the template. I didn't sign anything saying that I am guaranteeing his measurements are correct merely that he was there and did his job. Like any tradesperson who comes to your house, you trust that they know what they are doing. I am extremely frustrated - any advice or commiserating welcome!
