It would be helpful if you posted photos of all your selections. It's difficult to give advice on any one item in isolation--it's the entire space that needs to be considered.

Thanks! I updated and will try to share images of the choices. I don't have pics of the kitchen yet as the project will start in a couple weeks.

We did new granite this summer and I remember both of those. I was looking for "calm, less dramatic", so the Viscont was too much, IMO. The slabs of Himalayan White had a wide range of variations. Some very subtle, others not at all. When we were considering one of the slabs of Himalayan, one particular dealer said it was quite porous, and required an upcharge for sealing it.

Hopefully you have actual samples of floor, cabinet, and the granites, and can take them to the store with the range. You need to be sure that they are all in the same white/gray family - that is, warm or cool.

One point in favor of viscount White is that it is very dense and doesn't need sealing. Try to find info on Himalayan - if it needs sealing, that needs to be a routine maintenance chore else you risk staining.

When I was granite shopping, I found a website that listed just about every granite variety, with the characteristics (density, hardness, etc) of each. That is how I knew my granite didn't need to be sealed. It wasn't a wholesaler or retailer site, and sadly I can't find it now.
