Add finish plywood over the rough plywood now exposed. Or remove the rough plywood if it's too thick.

Another alternative: re-finish or paint the stairs and use a quality runner down the middle and apply carpet to the two rough ply landings.

Thank you for the help! Can finish plywood be stained ? We are trying to match the LVP. What about LVP on the rough plywood landings? How would that look?

Finish plywood can be stained the same colour as the stairs, though it will show a bit differently. LVP will be much harder to install, if this is diy.
