Anytime you remove roots you need to reduce the top load to match - e.g. the flowers and leaves. They will probably fall off on their own soon enough and the youngest leaves will recover. I would not be tempted to water it a lot to compensate - that will cause its own issues.

So should i remove some of the leaves?

Normally I would say yes, but plumeria bleed so much sap that I think it might be counter-productive. Plus its near the end of the season and they should start to go dormant (here that happens by November).

Remove most of the leaves, and stop watering. It is going into shock and water will make it worse. Not the best time to transplant one. You might be better off moving it to a large pot in a really loose mix, where you can monitor the soil moisture better. I don't know how many roots are on it, but you might be best treating it like a very large cutting.
