I need to see the backsplash tile you are using. Sometimes a tile is just to busy to go up the wall.. What is the new counter top (I sure hope real stone)

Another vote for up to the ceiling; otherwise, it looks too choppy IMO.

Countertops will be granite (Snowfall). Haven’t picked the tile yet as I want to see the granite installed. The tile will be simple so as not to compete such as solid color, but with some texture.

I would tile it all— it’ll look more cohesive among all the wall edges and square shapes.

We think you can tile up and around windows, however you might just want to make sure you're backsplash is rather simple, so that it isn't too much to look at.
