What about using something with movement and color? I think the brown/beige is dowdy. Your floors are pretty neutral and it gives you room to coordinate an exciting countertop.

If the options I would pick the first one for sure.

What else do you plan to do to the space?

Are you open to :

Changing the flooring? Or maybe painting with a stencil over the tile?

Changing the hardware?

Changing the sink?

Adding backsplash?

Maybe once your doing countertops anyways, Changing the angled island would be simple. It would obviously include adding some tile, and wouldn’t necessarily be cheap. But I think if you’d want to do this now is the time.

I obviously gave you a couple ideas for the space mainly because I am not sure what you plan, and what you can do.
Be more specific for more specific advice. And if your open to some of these simple tweaks, more photos will help the suggestions

I would go with a lighter quartz….a white with gray veining, mimicking marble, perhaps…..don’t try to match the beige-y floor!

Too much beige. It's like you are trying to match the counter to everything rather than providing contrast. I might try a very white Quartz with only the slightest amount of barely-seen veining. Any heavy veining of the Quartz would look terrible.

All three are updated versions of what you’ve got. Assuming you want to keep it super blending with the floor, make sure to acquire s few objects textiles incorporating that pretty turquoise,

Not sure about the countertop ideas, but consider changing cabinet knobs and pulls to black to tie in with appliances.

Your room, including the floor, is very neutral. As most have suggested, I'd go for a richer, prettier look.
