You will need to check to see if, the radiant heat mat is approved for wood floors first. The mats are usually buried in thinn-set. You should be able to break the tiles without damaging the wires. I would not chisel the tiles. You would risk damaging the heat mats.

You would need to make sure the floor is within manufacturer's flatness recommendation. Then you can float the floor over it. You will be building up the height. Make sure it does not interfere with your appliances.

Is this the only way to heat the kitchen? Honestly, a hardwood floor is much "warmer" beneath feet than tile. I'd give up the radiant, unless no other way. And let the heat mat be destroyed with the tile. Watch your transitions to adjacent spaces. And this flooring, should make sense with the REST of the home. Which is what?

Radiant heat does not do much for wood floors.
