I have a 6'x7' breakfast nook and a 42" diameter table works well. So I think you could easily go up to 48" diameter. Stickley have some nice round table options.

Remember to leave room for chairs on the outside and for people to walk past and you might consider benches against the walls rather than built-in banquets. I got two long benches and they were far less expensive than doing the built ins and I like their flexibility and the way they look.
