Help! Kitchen backsplash issues: Are we being unreasonable?

Hello! We recently had our kitchen backsplash done and had to have the installer come fix some things due to some sloppy grout, tiles sticking out and cracks along the seam where the counter meets the backsplash-two weeks after the install. We are honestly still not thrilled with the result and feel that the caulking (which was done over the grout to remedy the cracking) looks sloppy and there are several areas where the grout is uneven and the tiles are uneven along the ceiling line. Are our expectations unrealistic or are we rightfully dissatisfied? I reached out to the company with our concerns and their response was that the installer was an ”excellent tiler” and the caulking is just supposed to seal the grout. I was under the impression that you don’t want to caulk over grout but that you should remove the grout to then caulk if necessary. Thanks in advance for any input!
