kitchen down to the studs

Time to take kitchen down to the studs.
Working on floor plan first.
100+ year old house.
20’ x 11’ floor space with 5 doorways.
9.50’ ceilings
Chimney bump-out (not shown) to left of sink, to be removed.
Door 1 to basement, 2 to entry hall, 3 to dining room (and on to living room), 4 to half bath/laundry and dining room, 5 to deck/yard.
No windows. Natural light from #5 door and window wall.
Family of four + dog and we cook almost every night. Eat in kitchen but dining room well used too.
I like cooking at one end of the space and eating at the other. Since I don’t have the usual kitchen window to look out, I like having my stove so I can look towards the deck rather than against the wall.
Skylight for ceiling nearest door and larger refrigerator planned.
Lots of unsolicited advice to close up a door to make a better traffic pattern. Friend/contractor advised venting stove would be problematic. (New stove, not downdraft)
I’ve read about ideal code measurements and it seems if I obey all of the inches to meet the perfect kitchen, I’m going to have a work space that doesn’t work for our family or house.
