Smooth has been the style for some time. Why are you considering texture? If your walls/ceiling are well taped and mudded then you are golden. If the seems and nail heads are seen then texturing is cheaper than re-mudding.

Unless there is a good reason for it, I would not texture either the walls and ceiling. Smooth is so much nicer.

No textured walls ever IMO except for maybe in a very elegant home you could have venetian plaster but thats the only time .I live in Canada and textured walls have never really been a thing here smooth is just a better finish ans textured is the fall back when the drywall guy is a hack IMO,
