I have a Lemon Question

Today I zested, squooze, and froze most of the Lisbon Lemons I have posted before. As I was zesting them I realized that about half weren't smooth-round but rather segment-shaped. (for lack of a better description.) It made zesting interesting. They didn't seem dry and gave out as much juice as I expected. The rind did seem a bit thinner on those tho'. I was wondering if anyone here might know the cause for this?

Are you noticing variability in fruit from several different plants? Or variability on the same plant from one season compared to the previous season? Or variability on this season's fruit?

This strangeness is from the fruit on one tree... Lisbon Lemon. It is different than the year before when all were perfectly/normally shaped. The odd fruit didn't seem to come from a single branch but rather scattered around.

An aside: I was out picking all but the green kumquats yesterday to make marmalade when I found one last lemon that I somehow missed. I left it hanging for a future need.
