In the design of a home, lighting is normally a lower priority. Usually other higher priority items are worked out in the architectural design, then lower priority items fall into place.

Lighting is important for work zones in your kitchen, for example. A light source will produce lumens 'to illuminate' something. In the kitchen that's the counter in a work zone. 450 lumens are recommended at the counter. The source or sources should be placed so your body doesn't shadow what you're working on. The output from narrow spot, wide spot and flood bulbs for the 2" and 3" recessed lights you're considering at the distance from a surface should be available. Use it to calculate what will work. Put everything on dimmers. Smart bulbs can allow you to control color, like 6 million choices . . With those high ceilings and small light sources. you may end up with a ceiling like the starlight headliner in a Rolls Royce. . . .And of course, windows don't count. Especially at night.

Well that sad to hear said, lighting should not be low considering every time the sun sets you need it. I would be doing 3-4 inch recessed.

I had the smaller lights in the kitchen of my previous house (moved two years ago), and have the larger ones in my current kitchen. I prefer the larger ones. The larger ones spread the light better - the lighting looks more even in the room. I have 9' ceilings. To make the larger ones blend in better, make sure the inside surface of the fixture is white. Then it will blend in a white ceiling. Mine are builder grade black and they look like black holes in the ceiling. We're going to replace them this year.
