Appetizer help……

No meat board, no cheese, artichokes or olives…..what can i do?

    How much work are you willing to take on? How competitive is this group? Will you steal the day by having the tastiest/most popular thing, or does it have to be visually amazing and impress people with the amount of work you put in? Do you have to make it or can you buy it? Hot okay, or cold only? Is the event all appetizers, or is this a prelude to dinner?


    Thoughts:

    Sushi (presume you would purchase)

    Devilled eggs (oldie but goody; can be tarted up with bacon or other extras)

    I blanch asparagus or green beans and dress them with oil, garlic and salt. Easy, tasty.

    Shrimp cocktail

    Egg salad caviar appetizer. There's a recipe on the jars of lumpfish caviar you can buy at the grocery store, or you can find a recipe online.

    Stacked appetizers or skewer appetizers can be more impressive visually.

    Mushroom spread…congealed with unflavored gelatin. Lots of herbs and spice, spread on crackers. There’s no one recipe, it’s more what kind of mushrooms you find and then what direction you want to take it…garlicky, oniony, lemony, etc. kind of like a spreadable stuffed mushroom.

    So I used to work in events and coordinated weddings for this rustic sugar bush (maple syrup) venue (I’m Canadian, can you tell? LOL) These defy your wishes but the first one that I make often is Caramelized Onions with Gorgonzola in a Phyllo cup. I make the phyllo myself with the sheets, use a small cupcake tin to form them. Bake. Cut up a TON of sweet onions and caramelize them. Add to cups and top with a chunk of gorgonzola and then bake until warm/cheese is melted. SO GOOD! The other would be a chicken satay (bite size chicken chunks on skewers) with an authentic Thai peanut sauce for dip. They had an amazing shrimp appetizer too but I can’t remember what the sauce was for the life of me, and it’s not on their menu anymore! (It has been many years since I’ve worked there) A few other options are homemade bruschetta. My sister has done those bruschetta bread crisp thingies with a slice of steak, and a homemade garlic aioli. Stuffed mushrooms of course, can’t go wrong there! Bacon wrapped dates stuffed with goat cheese, or bacon wrapped water chestnuts (those might not steal the day but they sure are delicious!) Anyways. I ALWAYS get mad compliments on the phyllo cups. People love them! It’s going to depend on how sophisticated your crowd is but my cousin had these fried Mac and cheese balls at her wedding (it was a very chic reception though, I swear lol! All the appetizers were to die for and the thing I definitely remember most about her wedding was the food!) They were a HUGE hit with everyone. Good luck!
