We have ensuites for the guest bathrooms, they are set up like yours. We have a light in the shower, one over the sink and a lighted mirror. Its plenty of light. you might want to eliminate the light in the center as it will be very close to the over the sink light and add lighting to the sides of the mirror. You need light from in front (sconces) for a flattering reflection. Overhead lights only are not at all flattering.

We used pocket doors to eliminate door swing on my kids ensuites. It saves a lot of room as the bathroom is not huge.

How wide is that shower?

I have a slightly larger bathroom with a similar layout. It's well lit with just a 3-bulb fixture over the sink and a light in the ceiling fan.

I like a light in the shower-it helps when I’m cleaning it. So, a vote here for a light; you might consider putting it on a separate switch.

I have a light in the shower as well as canned lights in the rest of the bathroom and sconces and mirror lights. Assuming you are remodeling the cost for the additional light is minimal so why not? 🤷‍♀️

Is there an exhaust fan?

I put them in my two showers on a separate switch from the other lighting.
