If the home is EIFS, those pediments are just thicker sections of foam.

Hmm, maybe I can get that confirmed from the builder.
Is it possible to put brick detail on top of EIFS?

Are you talking about windows that are under the porch? You won't be using real bricks in this case, but I suspect EIFs has a brick "like" foam piece that can be substituted by someone that knows EIFs. I wouldn't mess with anything unless it is under that porch. I would also look at maybe having some sort of overlay, to look like brick, done.

You could just flatten it if it's foam and have the EIFs fixed. But honestly you aren't going to notice it after living there a couple weeks.
