If you want it to be evergreen, you are looking almost exclusively at conifers, needled evergreens. Broadleaved evergreens hardy in your zone are few and very far between! And unlikely to get anywhere the size you desire.

For part sun, I'd be looking at yews, Taxus species. They come in various forms and mature sizes are tolerant of shade but grow rather slowly. Taxus x media 'Hicksii' would be my first choice.

I really am unfamiliar with anything evergreen except conifers as well but thought maybe there was something I was missing. We had tried a couple arborvitae species several years ago when we had less deer but they didn't last and were eaten.

Also, I know another person in this area that had yews and the deer ate them but I admit I do not know which variety they had.

For a somewhat similar situation, I've been eyeing some type of Pfizer juniper. I haven't done the research to figure out exactly which one, but have come to the somewhat reluctant conclusion that those big, overgrown shrub junipers that were planted everywhere in the 60's come as close as anything to fitting the description. They are hardy, evergreen (or everblue, take your pick) deer resistant, and grow to a reasonable size.

Absolutely no yew unless you are willing to go to heroic measures to protect them. I've had deer tear down flimsy fences to get at yew.

Junipers want full sun. Only the yews and hemlocks are tolerant of much shade.

And as to deer resistant....you are probably going to need to both fence off and spray with a repellant. There are not too many conifers that deer don't like and of those, none are going to be very happy out of full sun.

Sargent Hemlock (Tsuga canadensis 'Sargentii') would be a lovely solution.
