You should probably have at least 6 cans from what I can see in the pictures, and not randomly. You already have cans above your table. Make sure that the can size (4" vs 6") and led color temperature (adjustable?) are talked about before installing. I would skip the pendants with a low ceiling and put that money into under cabinet lighting.

(4) recessed lights would be sufficient lighting at 6" size lumenaires, placed at 24"-28" away from wall (close to counter edge) except at refrigerator. You could do more too, at different size and spacing.

The ceiling is not low, at 8' pendants work just fine.

The lumenaires do not have to be wafer lights. Since you have a tight budget and the contractor is dictating your choices, verify with your contractor what lumenaire he is proposing to meet your budget.
