You presently have a gas cooktop without any ventilation?

• Fully plan out your hood system and make-up air system before doing any demo/reno. Use the many threads here to learn what you need to do.
• I put my pot filler next to my prep sink where I would use it.
• Trash and recyclables went into base cabinets designed for them.
• Commercial ranges are typically not insulated for installation into residences; check with your insurance company. Typically in commercial use they are free standing not squished against a wall without a gap.
• A "pro" gas range set against a wall containing combustible parts (such as wood studs) will likely require a backguard / riser or a modification of the wall.

Regarding a pot filler: It is NOT necessary. It's a "one-trick pony". While you can fill a pot from it, you cannot drain the pot and there's no drain under it to catch any drips or leaks.

If you're on a well, it's recommended that you drain the pipes if you haven't used the faucet for several hours and you cannot do that with a pot filler (well, you can, but you have to fill something else and carry it over to a sink and dump it - not a pot or pan you're using to cook with, though).

Is this the same Kitchen from 2019?

My prep sink pot filler feeds RO water to whatever I need it for. I agree that a pot filler at a range/cooktop is a spill accident waiting to happen.
