Based on the original wood floors in my 1916 home, I would go with 3" inch planks if you want to stick with traditional and timeless. (To me, 6" inch planks are more traditional in historic farmhouse-style homes but that doesn't seem like the style you're going for.) My MIL just built a house and chose a similar colored floor (Shaw Flooring Gallatin Hickory--in Pathway, I think) and they painted their house SW Alabaster, which is a super popular white that works with a lot of decors. I'm not sure of the correct terminology, but if you want the "striations" that appear in the first wood floor inspiration pick, you should go with an oak species. Also, get floor samples! It's very difficult to see the level of "distressing" on engineered hardwoods without seeing it in person and it may be more attention-grabbing than you anticipate. I would personally recommend not going with something overly distressed as I fear it will prove to be a trend that passes.

I would have 2 1/4" unfinished, long lengths (1-10 ft.) select grade white oak installed, sand and finish. Stain color looks very much like Antique brown. The polyurethane in the photo looks like oil base.
