Countertops and backsplash-HELP

Verona white or luna pearl granite with matte white subway tiles or catch gray matte subway tiles? My floors are a natural wood color (so a lighter wood color), cabinets are white, fixtures and appliances are stainless steel. My vibe is earthy and natural with neutrals as the base to contrast with pops of color. I was leaning heavy into the matte white subway tiles but started browsing the light gray for a subtle added warmth look and contrast. I don’t want my kitchen to be underwhelming, but i dont want it to be too busy or trendy. The first picture is the closest to what it would look like with verona white granite and white subway tiles. The only picture I could find with the light gray is the second picture. The last picture is what I would love to do with my table and pendant lights, but i def do not like the dark grout on the backsplash and I am nervous about an all black granite because of how EVERYTHING shows on a black countertop. Any advice and input is appreciated and welcome!
