I think the M Touch S is the new 7000 series interface. The M touch was the 6000 series. I know they added some features like motion react (timer chime turns off when someone approaches the oven). From other threads the 6000 series is no longer in production so unless you find a 6000 series oven someone has in their warehouse - you will need to get the 7000 series with M Touch if you go with the higher end model. I do not know if they are still offering the direct select or sensontronic interfaces in the new series.
