Because wood is a natural material, there is variation. Stain can mitigate some of that.

But please check out your inspo pictures more closely. Look at the last one -- left cabinet under the cooktop is a different color than the right cabinet. Cabinets next to the hood are also different.

Lot of photoshopping going on in social media is the main thing you're missing. There's hundreds of phone apps even to get "bright and airy" and smooth out any color variations. Trust no online pics. No one is that beautiful. No room is that bright. No real wood cabinets are that evenly colored, without pixel manipulation. Or paying for high end expesive custom cabinets and perfect wood matching.

I've seem an aging difference in yellowing where veneer ply is used for the center panel and solid wood is used for the rails/stiles. Less so when the panel is also solid wood.

Go to like a praline stain and make sure they have uv blockers. i dislike the yellowing of light maple stains or natural but i do like the hardness for wear and tear and couple that w more med stain. quarter sawn oak in natural can be an option. beautiful as well.

We put maple cabinets in a new build in 1999 and they looked very similar to your middle sample. Maybe the middle section of our cabinets were a bit better of a match, but overall they’re really similar. I think that it’s awesome that the cabinet maker gave you a heads up so that you could have reasonable expectations.
