IMO polished granite is pretty darn close to bullet proof and you can just use thea also as backsplash but you need to post pics of your space showing the cabinets the flooring and your lighting .I do not like mixing real and fake stone so if you want a tile backsplash I would look at glass tile to go with wahatever granite you choose and I would choose the granite and have it installed befor choosing backspalsh or wall color
