IMO stacked stone only belongs maybe outside and not sure how the pic shows the layout you posted to describe it . Why not just do a simple tile stacked instead .Maybe 1 x6

Stacked tile is definitely the fallback plan. If there's a sheet of stack stone laid out in stack bond, I thought the installation could be familiar and reasonable since this is for an exterior application.

I don't think one would exist - having a stack bond pattern defeats the entire concept of stack stone. The surface character of stone used for this concept probably wouldn't work well in a stack bond pattern anyway. If it's the joint pattern that is the overriding feature you want, then you should be looking at other material choices.
