That is certainly not MCM drywall it over and get a great piece of art to hang there . If you want to keep it then square it off those no sense arches are an 80s thing best left there . You have anice window in the space and honestly DR IMO do not need huge amounts of natural light since mostly used at night .

My husband is an artist, so am happy to put some art up, but am at a loss regarding configuration... two large pieces? Or several small pieces? Symmetrical or no? Looking for ideas on shapes that might work

If you don't want to close up the arch, I'd add two smaller pieces of framed art on either side. I agree a buffet would be nice placed on center with the arch.
