Evolving projects and sunk cost fallacy.

I have been renovating more or less continuously but at a slow pace since 2014.

The kitchen renovation was planned more or less around that time because of various plumbing and HVAC elements and I had two layouts developed, and at the time I was also on Facebook.

I live in a midcentury house and I have been pretty tied into maintaining a midcentury look. I have always been a fan of Chambers ranges and I found a Chambers wall oven and cooktop. One of the great things about these is that there are no electrical components at all. There's really nothing to break or malfunction.

So the heavy Chambers pieces got shipped to me then shipped to the restorer then shipped back at some expense, and the pieces were restored at rather great expense, and various things have taken place in the last few years and now I am sort of dragging my feet about actually using these in the kitchen. There has always been a plan for there to be a full sized electric convection oven as well. There is also been some adaptability designed into the kitchen. The cooktop (it's really a rangetop) is 27", but the cabinetry is designed to fit a 30" cooktop. I designed a cabinet front to replace the space in the cabinetry if I ever replaced the range top with a cooktop. I am also wired for induction.

The Chambers oven is going to sit on a counter. It could be removed, technically.

I think it has just been so long since this project started, and these have been sitting there for a couple years and recently my SO, who does most of the cooking, has expressed some ambivalence regarding these, particularly the oven, which is not really used like a regular oven (although we do have another oven). So I don't know why I am having cold feet at this point. There is a market for these restored appliances but I would probably lose a certain amount of money at this point.

I don't know if I expect anybody to give me an answer, per se, I just wonder what people's thoughts are.

These are mine, in the copper finish

This is a pair of stainless ones in situ.
