Can you move the drawers in the vanity to the outside edges so you have room for sconces on each side of two mirrors? Otherwise, since the one side is against a wall you wouldn't be able to use sconces. Sconces are the best kind of lighting for grooming. Overhead lighting is much less desirable. In the picture below they have a drawer section in the middle, but at least this will give you an idea of what I mean.

The vanity is already made so moving the drawers isn’t possible.

You can also do one large, horizontal mirror over the entire vanity - unless the wiring has been done to put sconces on the sides of the mirror (versus on top of the mirror). You may have to get one custom cut & framed if you go with a single one (or you may get lucky - I know Lamps Plus has a terrific selection of large framed mirrors)

I did some searching and I did find one large mirror that’s 84” wide so that’s what we’re going with. It’s also the led lit kind so I don’t think we’ll need additional light fixtures. Thanks for all the suggestions!

For maximum usable and to visually increase the size of your bathroom I would suggest one long mirror.
