I'm in northern Virginia, about thirty miles south of DC. We've tried Brown Turkey, Celeste and Chicago Hardy. Planted on a south facing wall next to a foundation they thrive with little to no die back until the cold winter that seems to come around once a decade. Temperatures in single digits cause die back to the ground. They regrow as large multi-stemmed shrubs. Pruning a fig to a 6x6 space would result in little fruit.

There are a few dwarf fig varieties available, Fignomenal, Little Miss Figgy. Haven’t tried them, but they might suit your situation.

Almost any fig tree can be shaped and pruned to your liking.

In your zone you might have to protect them in winter, so a tree shape will be a bit of work.

Every so often even in zone 7 one can get late frost once the fig tree is leaf out.
