If you're ready to change the layout (which you'll want to if you want to use that corner) draw your space to scale with pertinent measurements, post it here with your needs and preferences, and I'm sure you'll get some suggestions.

How deep is the space where the fridge is? Guessing the easiest fix is to buy a counter-depth fridge (less than 25" deep). If you need more cubic footage, remove the cabinet above and get a taller fridge.

It will not be cheap, but probably cheaper than moving things around and getting new countertops. Sell your current fridge.

Looks like an adequate landing spot for people taking things out of the refrigerator, or a useful space for the cook at the stove to put things down.

What kind of space is missing in your kitchen that could go there? It doesn't seem like a good spot for food prep because it's not close to a sink, as far as I can see.

Are you planning a different spot for the mini-oven? That's taking up a lot of counter top, but maybe you use it a lot and it's worthwhile.

Show the entire kitchen in pictures, all angles

Draw and measure every wall, window passage.

Show size and space of adjacent and perimeter rooms. Pics and in your drawing.

Without seening the rest of the kitchen, I would say just turn the toaster oven so that its back is to the short wall. That will make it easier to use and free up landing space by the cooktop. Too bad the outlet is just there - perhaps have another added in the corner for the toaster oven.

IMO a to scale floor plan and mor einfo. The plan so we can see all the space the info to explain what you are planning to do. The plan show every window, doorways where those doorways lead allmeasuremetns clearly marked posted in a comment here in jpeg . Lots of free advice to be had.
