stainless sink gets my vote.

My girlfriend just decided on this one

The granite composite sinks in the whites or creams colors tend to be higher maintenance. They stain more easily, and are harder to keep looking clean. The granite composite sinks in the darker colors are almost carefree. I previously had a BlancoDiamond Super Single in the anthracite color (a charcoal), and I had to remind myself to clean it, it was so easy-care. So if you decide to go with a granite composite sink, avoid the white/cream colors. The Blanco Silgranit anthracite or coal black colors look very sharp in a kitchen, especially against your white counters. Then if you get a faucet in a polished chrome, it's like jewelry against black velvet.

If you’re a leave-the-wine-spill-in-the-sink-overnight type, the lighter composites aren’t for you. Rinsers will have no problems.

The house we rented while building had a white Kohler sink. I think it was some type of enamel? It was awful to keep looking clean. It showed all types of metal marks from anything you placed in there and it was hard work to get the gray marks off.

Happy to get back to stainless sinks in the new house.
