Do you have any hobbies? need a workout area? host game nights? I think figuring out a use for the room will be the first step. Whatever you do, it should be easy to switch back to a dining room for resale. btw. Love your painting

I like the table but too many chairs. Place the table under the window with just two chairs.

Add a comfortable seating and storage for hobby gear. Reading lamps. Coffee table....for coffee lol.

If you ever host any of the holidays, then keeping it as a dining room might be best. If you do this, then ensure that you two have Sunday dinner in this room at least twice a month.

Just curious, but does your table shrink to be a round table? It might be nice to set it up in that configuration with just 4 chairs. I also like the suggestions tracefloyd and shirlpp purposed too.
