If it is just the showerhead and handheld , then yes. But watch for finishes. Chrome and matte black are probably the only 2 that would be the same from one brand to another.

Since the control valve is installed, that piece and the trim that goes on top of it must stay as is. You can probably pay to have the plumber change it, but you better do it fast

If it is just roughed in at the moment, you can likely change the rough in valve. If you can’t, most manufacturers will have interchangeable cartridges/handles and so as long as you keep the same manufacturer and the same number of outlets then you can likely change handles.

IMO a question for your plumber.

If this is a custom home, then you can do anything ... it just takes time and money. Check with your builder about making the changes and what the delays and costs might be.
