I assume this is pressure canning? I think if you put the 55 minutes jars straight into the fridge you could reprocess tomorrow for 85 minutes. I’d worry about the quality of product after all that processing time though. Can you keep the 55 minute jars in the fridge and just use soon vs reprocess?
