How hard would it be to change this ceiling color?

I'm looking to purchase this home and it needs a ton of work. One of the wood colors I detest is orange colored oak, which this home has a lot of. I have no problem changing out the floors and other wood, but how difficult would it be to change the ceiling color with stain? I prefer a lighter wood and I'm thinking about having the floors and other wood a lighter color. I'm leaning towards a tile that looks like wood for the floors. I'm wondering if the same tile can be used on the ceiling to cover the orange color? I like the honey color (below) or a natural color. Or, would it be easier to just change the stain color of the ceiling without adding tiles over? Another possibility would be to just have it painted (I will have white walls). I found a photo that has dark ceilings and it looks nice. I'd like it to be more contemporary if possible. Note: I would not have carpet in this area; there would be no table or chairs in this area; I will cover the stones on the fireplace; and, I would open up the left part where there is wood on the walls to expose the kitchen on the other side.
