Suggestions for the bar wall …

A Carnegie Deli-inspired ’Wall of Fame’ using photos of family/friends or sports figures, etc.:

Or a chalkboard sign or wallpaper:

It appears, from this angle, that shelves could get in the way of watching TV and/or impede traffic flow into the bar area. What would you put on the shelves? I would wait until the job is finished, room is furnished and TV is in use - then decide.

With the angles, soffit, window, low ceiling, there is a lot of visual cluster happening in this area. I would complete the project and then see if this wall really needs anything. Perhaps at that point you can add an accent paint color or wallpaper it. Also, have you measured the TV, will it really fit on the angled wall? That space seems so small.
